So my garden, which was so lush and beautiful in the middle of the summer, succumbed to blight and is now a pitiful sight. However, we have gotten quite a few tomatoes from the garden, and the pepper and eggplants, which escaped the scourge, are just now producing. But, we have so many tomatoes that we can't eat them all, and I turned them into...
SAUCE!
And it's not just puree, it's actual sauce that, remarkably, tastes pretty good! I've never made fresh sauce before; I've always used Francesco Rindaldi, and occasionally Classico when it's on sale, so I'm quite pleased with myself. I do have more tomatos ripening on the counter, so I may need to get some more mason jars.

Congratulations! Did you water bath them? And, if you want, I can give you a couple of jars. When producing at that level, it's silly to go buy a dozen jars. :) Love you!
I have jars also Beckie. Lots of Jars.
No, I didn't. I chopped them all up, skin, seeds and all, dumped them into a pot and started cooking them. Then, after they were sufficiently mushy, I used that handy dandy de-seeding machine (don't know what it's called) to get all the gunk out of the sauce. The kids got a kick out of spinning the handle for me and hearing the tomato juice dribble into the pot!
