I brined a whole chicken overnight. I've never done this before, and I hope, when I cook it tonight, that it comes out as juicy and flavorful as everyone says. If it does, I'll share the recipe. I'm also going to try baking platanos (plantains) to see if they come out as sweet as baked yams. I hear all that starch converts to sugar during the baking process. I hope so. And I need some sofrito to make yellow rice. Then we'll have a lovely Puerto Rican dinner!

As for the yellow rice, I love to make the Vigo brand yellow rice. It is delicious. I like to mix in some wilted, chopped spinach as well.
