Lasagna
I remember the making of lasagna being a whole-day whole-family experience when I was little. I think it's because Mommy always made the sauce from scratch (well, not from tomatoes from scratch, but from puree and such) and we always made two pans so that we didn't have to repeat the process too soon. I recall hard boiled eggs and sausage and other meat. With that memory in mind, it's understandable why I never made lasagna myself (in addition to my aversion to ricotta cheese). Until a couple of months ago, that is, when I made my first "simple" lasagna. Since I don't make sauce from scratch, the whole process takes only about 45 minutes to accomplish and about half-an-hour to cook. And it turns out that I don't mind ricotta anymore; in fact, I kind of like it! And Miguel is happy too, because lasagna is one of his favorite foods (next to pizza).
