According to Daddy, the only fish dinner is breaded and fried flounder with hollandaise sauce, potatos au gratin and broccoli. Actually, there are a bunch of other things to do with fish, and because fish cooks so fast, you can have a meal on the table in less than half an hour! Tonight:
Mustard Broiled Fish Fillets
2 lbs basa fillet (or any fillet you like)
1/2 teaspoon salt
2/3 cup mayonnaise
3 tablespoons dijon mustard
2 tablespoons grated parmesan cheese
2 teaspoons dried dill or chives
Place fillets on lightly oiled broiler pan and sprinkle with salt.
Mix mayo and mustard in small bowl. Spread over fillets.
Sprinkle with parmesan cheese and dill
Broil until top is lightly browned (about 5 to 10 minutes, depending on thickness of fish)
It's a yummy one. You can serve it with anything. Mashed potatoes and a veggie will be our sides tonight. Now, is angie allowed to eat fish? She'll enjoy it if she can. . .
