Days and Nights, or What's for Dinner?

Since my beloved works days and I work nights (not all nights, but some, especially now that I'll be starting at Huntington Learning Center), it gets confusing to try to plan dinner on the day of. I have to make sure that it's something that can simmer some days, while something quick will work for other days and yet other days I can spend an hour cooking a meal. I keep meaning to sit down and write up menus for the week, but I always seem to find other things to do. Plus, I often look at what I've planned and think, "I don't want that for dinner tonight!". I guess I just need to sit down and do it.

It'll probably make grocery shopping more efficient too.

You know what I do? I make a list for the week, planning something feast like for Sunday, pasta Monday, chicken Tuesday, pork Wednesday, beef Thursday, Pizza Friday, and sour or sandwich Saturday.

Now that I have seven meals planned, if we end up going to Savannah on Sunday, I can just use the quick pasta meal and make the larger meal on monday. They can be mixed up. But the key is to plan you do like to eat, that way you won't not feel like it when it comes around. Usually I'm looking forward to the day I get to eat "that".
