Chicken Carcass

We had a birthday party for Miguel's Mom today. Whenever we have a get together with his family, someone always roasts a chicken and there's always a chicken carcass leftover at the end of the party. I love chicken carcasses. I love to make soups and stews out of them.

Tonight, I hit the jackpot. Marilyn brought not one, but two chickens tonight! I'm boiling them down as we speak. In fact, sometimes I carve them poorly just so that there is a little extra chicken meat on the bones when I'm through.

Tomorrow night will be a chicken soup fiesta!

I once made a pretty good chicken stock out of one, and froze it in little bags for use in recipes. Mostly, though, I just throw them away. Can't stand having them around!
